Rochambeau Oysters: Our Rochambeau farm is situated at the mouth of the York, where those very same French ships lay in wait, a mere 28 miles from the mouth of the Chesapeake Bay and the great Atlantic Ocean. This proximity to the sea delivers a far greater bite of salt than the Rappahannock, and yet the Rochambeau is still touched by the sweetness of its freshwater beginnings in the Blue Ridge Mountains. Often described as the quintessential Bay oyster. Due to its perfect blend of sweet and salt, the Rochambeau could easily be the best of both worlds.
Rappahannock Oysters: Our Rappahannock farm is situated near the mouth of the Rappahannock where the river meets the full force of the Chesapeake Bay. The influence of the mineral rich freshwaters is unmistakable and accounts for this oyster’s trademark ‘sweetness.’ The low salinity (a mere 15ppt) gives you a hint of the sea while allowing the complexity of the animal shine through. Flavor depends not just on what you eat, but on what you eat ate. Therefore, it’s critical to have a healthy, diverse ecosystem in which to grow. The lower salinities not only afford you more diversity, but a lower dose of salt so that you can truly taste that diversity.
Olde Salt Oysters: The Chincoteague salt oyster is often called the aristocrat of the oyster family. Made famous in the years following the Civil War, it is renowned for one thing … salt. With virtually no fresh water sources, the bays and cuts surrounding Chincoteague Island are fed almost exclusively by the Atlantic as it pulses in and out of Chincoteague Inlet. A carpet of brilliant green saltwater marsh bridges the gap between the island and the mainland, marred only by deep water cuts and tranquil back bays. It’s within this nutrient-rich marshland that we grow our Olde Salt Oysters™

**IMPORTANT SHIPPING INFORMATION: It's essential that Fresh Oysters arrive at their destination in a timely manner. If you are shipping outside Virginia, they should be shipped Overnight via Air. Due to their time-sensitive nature, you will NOT be presented with less expensive USPS shipping options at checkout. To ensure that you receive fresh and cold product, we only ship this product via UPS. If your order is needed for a specific day, please select arrival for a day or two before your event, just to ensure your plans aren't affected by a possibly shipping delay.
If you are planning a party, please order before 12:00 p.m. the day prior to your party. If your party is on Saturday, order by 12:00 PM Eastern time on Thursday. Our oysters stay fresh for up to 10 days when stored at 45 degrees (refrigerator temp), so this won't impact your enjoyment. If the product is more than 2 days in transit, you should dispose of it and we will issue a refund.
Our order cutoff time is 12:00 P.M. Eastern time, weekdays Monday through Thursday. We do not ship on Fridays. Orders that come in on Friday will be shipped on Monday.
